vodka

Distilled primarily from high-starch plants, vodka typically isn't very flavorful. Potatoes are the most common base, though one can also use rye, corn, grains, or beets. Vodka generally is not aged.

Sometimes considered a type of tequila, mezcal is also distilled from agave. The core difference is in the distillation process. Tequila is made exclusively from blue agave, which is cooked or steamed before being fermented and distilled. Mezcal is created by smoking agave hearts or stems in a pit or kiln, at which point the plant is crushed, fermented, and distilled.

cognac

Cognac is a specific type of brandy produced from distilled white wine. It must be distilled twice, using copper pot stills, and aged in French oak barrels for a minimum of two years. Cognac's distillation season lasts from October 1 through March 31, a five-month annual window.

armagnac

Armagnac is a district in southwestern France which is known, not for the grapes which are grown for table wine, but those grown for distilling into brandy. The brandy produced is called Armagnac.

Cachaça is a liquor produced from sugarcane in Brazil. Like rum, cachaça has two varieties: unaged, known as "branca" (white) or "prata" (silver), and aged, known as "amarela" (yellow) or "ouro" (gold). The former is usually bottled immediately after distillation.

Pisco is a colorless or yellowish-to-amber colored brandy produced in winemaking regions of Peru and Chile.
